DICED GREEN CHILLI                                        40G

CUMIN SEEDS                                                    1 TSP

 

Method: Potato

 

Half the new potato and coat with the oil and season

Slow roast until soft at 180c on a flat baking tray

 

Method: Mojo Verde

 

Dry roast the cumin seeds until fragrant

Deseed the chillies, blitz up the cumin seeds then add the herbs, vinegar, oils and garlic

Pulse and do not over blend, check the seasoning.

 

Mix enough mojo verde to coat the roasted new potatoes and serve immediately
