Vegan Orzo Pasta


  • Orzo Pasta 150g
  • Tomato puree 2 tbs
  • Dried Oregano ½ tsp
  • Salt ½ tsp
  • Cavolo Nero 100g
  • Olive oil 2 tbs
  • Pitted Green olives 50g
  • Capers 50g
  • Sun Blush tomato 50g
  • Red chilli, sliced 1 ea.
  • Salt ½ tsp 

For The Pesto:

  • Basil 100g
  • Olive oil 180g
  • Pine nuts 35g
  • Engevita(Nutritional Yeast) 20g
  • Garlic 1 small clove 


Vegan Pesto 

  1. Pick the Basil from the stalks 
  2. Blend everything using a small blender 
  3. Check the seasoning 


Orzo Salad 

  1. Bring water, salt, tomato puree and oregano to a boil in a pot 
  2. Cook the Orzo until al dente, strain and chill quickly on a large tray in a shallow format 
  3. Slice the olives, chop the sun blush tomato and drain the capers 
  4. Take the stem out of each leaf and chop into diamond like pieces. 
  5. Sauté the pieces quickly 1-2 minutes, throw in the chilli halfway through this step. 
  6. Mix this all together with enough Vegan pesto to coat and check the seasoning 
  7. Arrange your Orzo salad on suitable plates or dishes, keep some pesto and olive slices for the top
